Origin

The Baker started in 2024 in Malappuram with one obsession: marry the crackle of Middle-Eastern kunafa with smooth, well-tempered chocolate and a generous heart of roasted pistachio.

We make in small, fresh batches so every bite snaps clean and the kunafa stays crisp. No tired stock, no shortcuts on the good stuff — just bites worth coming back for.

How we make it

From kunafa & pistachio
to a finished bite.

  1. 01 / Toast

    The kunafa.

    Fine kunafa (kataifi) pastry threads are toasted in batches until deep gold and shatter-crisp.

  2. 02 / Pistachio

    The filling.

    Roasted pistachios are ground to a smooth paste and folded through the toasted kunafa.

  3. 03 / Temper

    The chocolate.

    Couverture chocolate is melted and tempered on our line so it sets with a clean, glossy snap.

  4. 04 / Fill

    The mould.

    Moulds are coated with chocolate, packed with the pistachio-kunafa filling, then sealed.

  5. 05 / Set

    The chill.

    A short cool sets the shell firm so each bite releases clean from the mould.

  6. 06 / Pack

    The box.

    Bites are checked, weighed and packed fresh — made in small batches, not stockpiled.

    We toast the kunafa to a crisp gold and blend it with smooth roasted-pistachio paste.

    Glossy shell, clean snap

    Tempered chocolate is moulded around the filling so it sets with a glossy, satisfying snap.
